Warm Chocolate Cake


Here is a variation on the dessert made famous by Jean George.

  1. Butter and flour 4 6-ounce ramekins.
  2. Melt one stick of butter with 6 ounces of bittersweet chocolate.
  3. In a separate bowl whisk together 2 eggs, 2 egg yolks and 1/4 cup of sugar until thick.
  4. Whisk in 2 teaspoons of flour.
  5. Whisk the chocolate mixture into the egg mixture.
  6. Fill the ramekins and bake for 6 minutes at 450 degrees.
